Module Description: To enable students to critically evaluate key issues relating to public health nutrition in Ireland and communicate a health message across different population groups.

Module Indicative Content
Unit 1 - Public Health Nutrition overview
Role of public health nutrition, history, principles and public health nutrition in Ireland, UK and different parts of the world, dietary patterns, vitamins and minerals concern.
Unit 2 - Developing strategies in public health nutrition
Community – programmes to improve behaviour in adults and children, analysis of successful programmes, effective communication and health education for a community setting. Individual – approaches for an individual to change behaviour, theories, analysis of successful measures, effective communication and health education for an individual. Omics approaches – stratified/personalised nutrition, genetic tailoring of diets.
Unit 3 - Evaluating evidence on dietary changes, interventions and policies
Behaviour change theories and models to investigate dietary and nutrient patterns, collecting data for diet and nutrition surveys, strategies used to change behaviour food intake, advantages and limitations. An overview of food and nutrition policies design, data collection tools for validation, ethical issues, ethics of dietary change in diverse communities and their effectiveness and limitations; to include fluoridation, folic acid fortification, salt iodisation. Impact of these food/water fortifications on the nutritional quality of food and diet.
